Her personal journey into holistic health began in 2011 after being diagnosed with “leaky gut” and multiple food sensitivities. In 2016, her visit to the Years Restored Lifestyle Center in California marked a turning point, helping her overcome the debilitating symptoms she faced during her 20s and 30s. Inspired by her healing journey, she co-founded the popular Facebook group Plant-Based Gut Health in 2018, offering practical tips, recipes, and support for those navigating health challenges.
Dr. Choe’s passion for education led to the publication of The Autoimmune Plant-Based Cookbook, co-authored with Mercy Ballard. This resource highlights anti-inflammatory recipes inspired by the Years Restored Lifestyle Center, aiming to empower individuals with tools for recovery.
In 2020, she co-founded Med Missionary, a platform addressing global health challenges through natural remedies and lifestyle medicine. Dr. Choe also speaks on various topics, including emotional health, Christian living, autoimmune diseases, and plant-based nutrition.
